3 – Very Ripe Bananas

Use very ripe bananas for this recipe; they’ll be soft with many black spots and have a wonderful, deep flavor. This recipe will still work if you use hard yellow or green bananas, but they’ll have a much more starchy and less banana flavor.

I replace the sugar in this banana bread with brown sugar for a deeper, richer flavor and I add 2 teaspoons of vanilla extract to give it a delicious, warm depth of flavor that pairs perfectly with the banana. You can substitute the vanilla for almond or any other type of extract you have on hand. I also swap some of the butter for mayonnaise in this recipe; it works just as well and adds extra moisture to keep this banana bread super moist.

Whisk melted butter and brown sugar in a large mixing bowl until combined; then stir in mashed bananas, eggs, and vanilla. Combine flour, baking soda and salt in a separate bowl; then stir dry ingredients into wet ingredients until just combined (a few streaks of flour is OK). Spoon batter into a greased 9 by 5 inch metal cake pan and sprinkle with brown sugar before baking. Bake until a toothpick inserted into the center comes out clean. Cool in the pan before slicing.
